This digi stamp set comes with three different versions. You get the "Welcome Baby" version, the decorated scallop and heart version, and the blank version for adding your own text. This would be a great place to add the baby's name and birthdate.</div>

The digi stamp is colored with copics in Meghann's colors of gray, teal, and pink. The booklet is made using Bazzill cardstock as the cover. The printed pages for the inside had lines for recording the gift and who it was from. I bound the pages inside the booklet by punching two holes on the center spine of the booklet through all layers. Then I put ribbon through the holes and tied a pretty bow. The bow is decorated with little beads. </div>

To be very honest I was so busy getting ready for the shower that this booklet was kind of a last minute idea so I had to rush through making it much faster than I liked.</div>

How is it possible to be so far behind on my albums?</div>

Isn't that the question we always ask ourselves? I think if I ever am truly caught up I won't know what to do with myself.</div>

I spent a huge hunk of time a few weeks ago trying to organize all of my digital pictures. Again, I am sure that many of you find yourself in the same sea of digital pictures that I have. I am a pretty organized person, but haven't ever found a way that really keeps the pictures organized and easy to find. And of course the other worry is backing them up so a big computer crash won't result in losing all the precious photos I have taken. Augh! </div>

After spending time organizing pictures and albums I realized that my daughter Taylor's albums were only done to the beginning of her 1st grade year. YIKES! She is beginning her Freshman year of High School in the Fall and if I want to have her albums to show at her Graduation Open House I probably better get a move on. </div>

Here is one page I recently finished. This page uses the <a href="http://www.shellysimages.com/DigiShop/index.php?id_product=144&controller=product">"Christmas Garland"</a> digi stamp from Shelly's Images. I colored the digi with Copic colors and then added some Copic Opaque White for highlights. I also used Pearl Ex Sunset Gold for more sparkle on the gold areas. I added tiny pearls to the middle ornament. Since the bottom pearl shape of the middle ornament is kind of a tear drop shape I added liquid pearls to fill in that shape. It worked great! Then I covered the ornaments with Glossy Accents. I wish the pictures captured just how pretty it turned out. A nice result is that the glossy accents kind of pulled away from the Copic Opaque White. Which really added an interesting detail. I did some fussy cutting around the digi and popped it up on the page. I really love how it turned out. Not a difficult scrapbook page, but very pretty.</div>

I have been told that I make the "BEST" cakes ever. And I have been asked what my secret is. hmmm....I didn't know I had a secret. I guess I just learned little things along the way that lead to amazing rich, dense, moist cakes.</div>

<b><span style="font-size: large;">Tip #1</span></b> - Use <a href="http://www.wilton.com/store/site/product.cfm?id=3E30D620-475A-BAC0-592117323818A1AA">Wilton's Bake Even</a> strips. It is true. They do work! I have had mine forever and they still work like a charm. Your cakes will raise evenly and not have those big cracks across the top. Don't worry about the size of your bake even strips. I use the large one and just wrap it around the pan and pin the end.</div>

Just soak your strips in a sink with a little cold water. After it soaks completely just run your fingers down the length of the strip. You don't want it to be dripping, but leave it pretty wet.</div>

<b><span style="font-size: large;">Tip #2</span></b> - For a beautiful layered cake be sure to level the cakes. Here are my two layers on cooling racks. The <a href="http://www.globalsugarart.com/product.php?id=27380&name=Ultimate%20Cake%20Leveler%20by%20Wilton&gdftrk=gdfV25706_a_7c2149_a_7c8856_a_7c27380&gclid=CJ-emcHn-bQCFayPPAodE3cA9Q">Wilton cake leveler</a> has different height settings. So just find the one that is perfect for your cake and cut across the tops. (I have the old version of the cake leveler. The new one folds in half for easy storage.) You might be asking yourself "why use the bake even strips if you are just going to level the cake anyway?" And the answer is that without the bake even strips you will have to cut much more off the tops of your cakes to get a level layer. Without the bake even strips the cake really "humps" up in the center and you lose alot of your layer when leveling. Remove the cut off portion and set aside. ( I will show you why later)</div>

Now mix your frosting. I use <a href="http://www.wilton.com/recipe/Buttercream-Icing">Wilton's Butter Cream</a> and <a href="http://www.wilton.com/recipe/Chocolate-Buttercream-Icing">Chocolate Butter Cream</a> frosting recipes. This will be a 10 inch two layer cake so I recommend doubling the recipe for a cake that large. This is beginning to sound like a Wilton commercial. :) And to my lovely daughter Meghann...if you are reading this...don't forget to measure cocoa by spooning and leveling just like flour. Oh...and add the cocoa powder to the mixer with the mixer on low speed. That stuff has a way of flying everywhere.</div>

For the top layer, place it carefully on top of the frosted 1st layer cut side down. In other words bottom side up. The cuts you created when leveling will face each other in the middle of the cake. This placement of the cake layers will give the best end result. Just be sure that the top layer is centered. You don't want the cake to look like a leaning tower.</div>

<b><span style="font-size: large;">Tip #4</span></b> - This really isn't a tip, but I thought I would share my edging decoration while I am taking pictures. I generally do this version of the traditional scallop along the top edge. Sorry, I am sure Wilton has a name for it, but I don't know what it is. Basically loop of the scallop goes opposite direction of the last loop. This scallop kind of "lays down" against the top of the cake. </div>

For the bottom layer I do the traditional scallop. The loop is on the bottom and the tail comes up over the top. So this scallop kind of stands up against the side of the cake. </div>

<b><span style="font-size: large;">Tip #5</span></b> - And this is maybe the ONE TRUE SECRET. I always refrigerate my cakes. It is best if you can make, frost, and decorate your cakes at least one day before you plan to serve it. Loosely cover it with saran and put it in the refrigerator overnight. The result is a moist, dense, delicious cake that makes everyone ask for the cake recipe. I love making things from scratch, but generally for my cakes I use just a boxed mix. And people never believe me. Here is my finished cake. This cake is going to my daughter's Middle School Dessert Social, so I have placed it on cake boards so that I don't have to worry about getting my nice cake plates back. I actually put this cake on two layers of cake boards because I knew it would be very heavy. </div>

This year I decided to try a squash fold card. This style card is generally made in either a 5 x 5 or 6 x 6 inch format. Keep in mind the square cards are more expensive to send. :( For my cards this year I am using the newest Shelly's Images digi stamp called<a href="http://www.shellysimages.com/DigiShop/product.php?id_product=195"> "One Last Stop"</a>. I have been so busy the last few weeks planning parties for two very special people in my life. </div>

My husband Jeff turned 50 on May 25th so I wanted to do something very special for him. He didn't want a big extravagant party, but I tried very hard to surprise him with a special surprise birthday dinner with some very special friends. I found out a few things while trying to plan a surprise party. 1. It is ALOT of work! I am terrible at keeping secrets. 2. My husband is nearly impossible to surprise. It is funny how he doesn't seem to notice alot of things....until you don't want him to notice. And 3. It is sooooo disappointing when the surprise is discovered. </div>

The bottom layer is 2 layers of 10 inch cakes and the top layer is 2 layers of 6 inch cake. All of the decorations are molded from fondant other than the paper umbrella. The sand is brown sugar and the birds are painted on with just black Wilton cake coloring. </div>

We also had a birthday party for our oldest daughter Meghann this last weekend. She turned 22 on June 9th but we had a little pool party and grilled hamburgers and hot dogs on Sunday. It was very windy but a fun day at the pool. Meghann and her boyfriend are leaving on a vacation very soon so I thought this "Flip Flop Cake" would be nice for her birthday.</div>

I used the 10 inch pan again to make a 2 layer cake. And again hand molded and cut all of the decorations from fondant. This time I used raw sugar for the sand. Which I think I like a bit better than the brown sugar.</div>

First I have to say that we have been having ALOT of fish and seafood for dinner! Recently a new store opened in town called Seafood Thyme. And we have had some of the best fish ever from their fresh fish market.</div>

This weekend we grilled some Chilean Sea Bass. My husband and I love to go to Kona Grill at the Plaza in Kansas City and one of our favorite dishes there is the Chilean Sea Bass. So we had a standard that we were hoping we could achieve at home. And WOW! Did it ever. This fish is so amazingly delicious. You have to try it. </div>

We like to serve our sea bass with a small cup of soy sauce. And last night we also served it with spinach fried rice. Actually...it started out being just plain fried rice and then we found some left over fresh spinach in the refrigerator and decided to add it at the last minute. Dinner was amazingly delicious. And even better than the Kona Grill. Which is certainly an accomplishment.</div>

And also sent a larger basket to our neighbors. They turned out SO cute, but one small warning...they melt very easily. </div><div style="text-align: center;">For our Easter Egg Hunt this year we changed our tradition a bit. In the past we have hidden eggs with coupons inside. The coupons would be for things like "have Mom make your bed" or "rent a movie". With only Taylor at home now the coupons don't work so well any longer. So this year we hid eggs with letters inside of them. The kids hunted for their egg color until they found all 5. Then they brought their eggs inside and began to unscramble the letters to spell out a word associated with Easter. </div><div style="text-align: center;"><br />

</div><div style="text-align: center;">Thanks so much for the recipe Darlene. Supper was DELICIOUS. The chicken was amazingly moist and tender. Although I do have a confession to make. The recipe called for Zesty Italian Dressing which I knew I had in the pantry. Small problem. It expired in November of 2011. So....now what? I had a hungry family to feed and no time to run to the store. So after searching through the refrigerator and cabinets I decided to use Caesar dressing. It was wonderful. Of course I didn't confess to the family until after they all tried it and loved it. </div><div style="text-align: center;">In the future I might try adding some fresh cooked spinach. Or even some steamed asparagus rolled into the chicken would probably be delicious. But it sure doesn't need anything. She is generally working on making beautiful cards and I am usually busy creating images for Shelly's Images.com. My family was waiting with plates in hand when the chicken came out of the oven. The only change that I might consider is finding a way to tame the mustard flavor just a bit. Maybe a few tablespoons of mayonnaise would temper the mustard. The roasted potatoes that we made were made by coating potatoes in a bit of oil in a ziploc. Sprinkle on one packet of Lipton Onion Soup mix and pour into a greased baking dish. The potatoes take about the same amount of time to bake as the chicken so it worked out perfectly. I cut my potatoes and added oil and then sat them aside in the sealed ziploc until I was ready to put everything in the oven. *Preheat oven to 300 degrees F. Brush some of the melted butter around a 9 inch spring form pan.<br />

*In a small bowl, combine crumbled graham crackers, the remaining melted butter, and 1 tablespoon of sugar. Press the mixture into the bottom of the pan. Bake for 10 minutes and allow to cool.<br />
<br />
*In a mixer with a paddle attachment, beat sour cream for 10 seconds. Add the cream cheese and sugar and mix on low for 30 seconds and then turn up to medium. Scrape the bowl.<br />
<br />
*In a separate container, combine vanilla, eggs, yolks, and heavy cream. With the mixer on medium, slowly pour the liquid mixture in. When half of it is incorporated, stop and scrape. Continue adding the mixture until the rest of the ingredients are incorporated. Once completely combined, pour into the cooled crust.<br />
<br />
*Lower oven temperature to 250 degrees F. Place a large casserole dish of water onto the lower rack of the oven to act as your "water bath". Place the cheesecake onto the upper shelf after the oven has had time to preheat and the water bath has gotten hot. Bake in the oven for 1 1/2 hours. Turn the oven off and open the door for one minute. Close the door for another half hour. Remove the cheesecake from the oven and place in the refrigerator for 6 hours to completely cool before serving.<br />
<br />
*When ready to serve remove the springform sides of the pan. Serve either on the flat part of the pan or run a knife along the bottom of the cheesecake to loosen.<br />
<br />
*For topping, in a small bowl stir together sour cream, 2 tablespoons sugar and vanilla.<br />
Spread evenly over the top of the cheesecake. (stay 1/2 inch or so away from edge of cheesecake) Drop teaspoonfuls of pie filling (without cherries) onto sour cream in a circular shape around edges of the topping. Pull a knife or spatula through the sauce to form hearts. Refrigerate.<br />
To slice, place your knife into a hot water bath and wipe dry each time you make a pass through the cake.<br />
Serve with the extra cherry pie filling if desired.<br />
